Rosemary Ranch Chicken

I found a recipe for rosemary ranch chicken online com and tweaked it a little. This recipe is truly delicious and we love it in our house! It's also easy to make because you should have most of the ingredients already at home. The chicken is very moist and delicious. I like to serve this with rice and add peppers, onions, mushrooms and pineapple to the skewers before barbequing. Enjoy!

(The last time I made this I forgot to take a picture, but I will add one the next time I make this recipe.)


Ingredients:
1/2 cup olive oil
1/2 cup ranch dressing (I use the low fat ranch)
3 tablespoons Worcestershire sauce
1 tablespoon rosemary (fresh or dried)
2 teaspoons salt
1 teaspoon lemon juice 
1 teaspoon white vinegar
1/4 teaspoon black pepper
Skinless, boneless chicken breasts- cut into 1 inch cubes


Directions:
  1. In a medium bowl, stir together the olive oil, ranch dressing, worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper, and sugar. Let stand for 5 minutes. 
  2.  Reserve a small amount of the marinade in a separate bowl.
  3. Place chicken in the medium bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes to 6 hours. (The longer you leave the chicken in the marinate the better it will be.) 
  4. Preheat the barbeque for medium-high heat. Thread chicken onto skewers and discard marinade.(On the skewers I like to add cut up onion, green/red peppers, mushrooms and pineapple.)
  5. Lightly oil the grill grate. Grill skewers for 8 to 12 minutes, or until the chicken is no longer pink in the center, and the juices run clear. 
  6. While you are grilling you can add extra marinade to the skewers if you want. 
  7. Serve kabobs with rice. Delicious!

Spicy Part II

Spicy has proved to be, quite possibly, the most hilarious student I teach. He has the best sense of humor and lovingly refers to himself as Spicy every day. He decided that all the boys in his class could be Spicy 1, Spicy 2, Spicy 3 etc and now all the boys like to be called "Team Spicy!" Haha!

Happy Valentines Day

Valentines Day was great this year! I had lots of fun with my kids at school and Josh surprised me at work with flowers. It was so sweet and such a great surprise, as I know how busy he is during the days.

After I was off work we went to the most amazing restaurant for dinner. One of Josh's co workers Sam had recommended it to Josh and it was delicious. First we got some yummy bruschetta as an appetizer.

Every teacher has to have at least one teacher sweater. I bought this one when I was student teaching. This was my third year wearing my silly Valentines sweater. But, I was feeling like a real dork wearing it at a fancy restaurant! :)
 

After dinner Josh took me to a chocolatier! It was a small little shop in Jeonga and we had fun choosing the ones that we wanted.

In other Brown family news I have 7 or 10 days left of work (my boss is freakishly unorganized and doesn't know when my last day will be yet), we joined a Korean gym (yay for getting in shape and working out together) and we are busy planning our anniversary vacation in April. The weather is warming up a bit (high 20's, low 30's) and we are anxiously awaiting information about where our next Army move will take us. Stay tuned!

Tomorrow is Valentines Day! Wow, it feels like just last week was Christmas. The weather here is getting a bit warmer and school is winding down. (It feels so strange to have the end of the school year in February!) 
This past weekend we had a blast. We have found such a great group of friends that we value so much. We celebrated Antonio's birthday with the "First Annual Ultimate Dart Championship" and also had Joe and Stephanie over for a yummy dinner and some Rock Band...way fun! We will definitely be doing that again soon! :) 

Last weekend while we were all out to dinner we decided that we should play darts the next weekend.
Myriam is going to school for graphic design and made this awesome poster for the dart championship!
Joe X is Joe and JCK is James. Pangyo- Unjung Dong is our neighborhood here in Korea. 

We had a bracket for the dart championship and were betting money. When it got down to the final 4 players the spectators (aka people bad at darts who got out in the first rounds) were betting money on their "favorite player." 
Stephanie and I wanted to make a fun present for Antonio and I found these fun ideas on Pinterest (aka my favorite website!)

This was the final product for Antonio's birthday. I was really happy with how it turned out!

Overall it was a great weekend with great company. We are getting excited for Valentines Day, and celebrating Josh's birthday 3 weeks later. Hope you all are having a great February!

Spicy

 This week we got a new kiddo in kindergarten. His name is Brian and he is the smallest, cutest little guy. He makes these hilarious little faces and runs around being hilarious. Brian is the smallest kid at BIS now and has a huge personality. 
Last week in class Brian, who has a surprisingly good English vocabulary, was rubbing his mouth and telling me that he was "so spicy." He just kept saying "spicy, spicy, spicy" over and over and I couldn't figure out what he was saying, as we were working in a textbook, not eating. Well, after a few minutes I realized that Brian meant when he said "the air is SOOOOO spicy!" He was right by the heater and the heater was too HOT, not spicy.  
Now, Brian is called "Spicy" and not Brian. He loves his new nickname and runs around yelling "spicy, spicy, I am so spicy." Hilarious.

I have two weeks left at BIS before my contract is over and I become an official "stay at home wife" or "stay at home mom with no kids." I am really looking forward to the down time and getting things done around the house. But, I know I will miss these kids a lot, and miss moments like this, when I am running around school screaming things like, "Spicy, stop running in the hallway!" Haha!

In other news, Seoul has been getting warmer! It's depressing when you think "wow! Today feels great!" and it's only 21 degrees. Needless to say, I am happy that this will be the last winter I spend in Korea!

Loving Korea

Some days I really dislike Korea. Ok, it's more than that. Somedays I sure hate Korea. I miss being close to family and having the conveniences of home. I miss Target and having a yard and having my own car. I miss not having to drive one hour to the grocery store and I miss easy communication. 
But, today is not one of those days. Today I love Korea. 

(Thankfully, these days outweigh the "I hate Korea" days.) 

It all started this morning. I left the house and was walking to work. As I was leaving our building I literally ran into an older woman who quickly started talking to me in Korean and showing me a piece of paper. The paper was all written in Korean but I could see two three-digit numbers and assumed that she was looking for a building and apartment number. So, in my broken Korean I started telling her where to go (using the Korean words for straight, right, left, one, two, three, yes, no, okay etc). 

She is telling me TONS of things that I didn't understand, but we managed to get her to the right place. Anyways, she looks at me as she says "com-sam-ne-da" (thank you in Korean) and for the first time realizes that I am not Korean. She just stared at me and started laughing....SO HARD! It was hilarious. It was like she was so busy trying to find the right place that she didn't even look at me or something. Anyways, it was hilarious and I was in front of my house laughing hysterically with a random Korean woman who just kept saying "white, white, white" over and over again.  

It's random things like that that remind me what an amazing experience we are having here and how blessed our Korean experience has been.
